"Make-It-Happen-Monday", 8.6




Here are the things that I am hoping to make happen this week.

GET IN MY BELLY!!!
Grub Menu (8/6 – 8/12)
MONDAY
BOLIVIAN INDEPENDENCE DAY meal – to include the colors of the Bolivian flag (red, yellow, green) in honor of my Bolivian hubby!
Baked Basil Tilapia w/ Sriracha (red), Saffron Rice (yellow), steamed peas (green)



Tuesday
Crockpot bar-b-que chicken w/pineapple, coleslaw, corn on the cob, drop biscuits…and pickles
Wednesday
Stuffed Bell peppers (ground turkey, brown rice, veggies, etc)
Thursday
Ceviche
Friday
Steak, chimichurri, roasted veggies
Saturday
Burritos – made with ground turkey, whole wheat, high fiber tortillas, Mexican rice, avocado pico de gallo, black beans
Sunday
- Lasagna (ground turkey, whole wheat lasagna noodles)

Listening to…
lots of shake-your-groove-thang music! I’ve been in a DANCING mood lately, ever since getting-my-dance-on this weekend.  So I’ve been listening to get-up-and-dance pop like Rihanna and Calvin Harris (on mu running playlist), SALSA (my favs include Marc Anthony, Victor Manuelle, Joe Arroyo, and Grupo Niche), and Samba!! 
Watching…
The OLYMPICS!!!!
…and lots of movies with my daughter.  Right now we are watching “Marmaduke” and watched “Dispicable Me” earlier.
Craving…
a fat juicy dill pickle…so I added it onto the menu for Tuesday’s meal!  
Loving…
all the family time I’ve had this summer! 
Wishing…
that my last two weeks of summer vacation turn out to be as fantastic and the other month and a half was!



One last little update:
Last night I did a Sunday evening long run and ran 6.5 miles, the longest I’ve run in a looooong time.  I swear it was just a COINCIDENCE but it just so happens that I ran 6.5 miles on Day #65 of my RUNstreak!!  I promise I didn’t do that on purpose; even I am not that nerdy!  Although I must admit, I wish I had thought about it ahead of time and had done it on purpose! J

This evening my daughter and our dog Bella came on my run with me.  I ran 2.5 miles while they did about 1.5.  I dropped them off at the neighborhood playground and then ran around it a couple of times to complete a mile.  I didn’t feel guilty about running such a little amount; the knees (especially the left one, which is the one that has two knee surgeries) are still a little sore from my long run last night.  I’m proud to announce:

RUNstreak: as of tonight, 66 days and counting…



I just may complete my Summer RUNstreak after all!!

"Make-It-Happen" Monday, 7.16


Here are the things that I am hoping to make happen this week.  Since we are exactly halfway through the month (already! can you believe it?), I am doing an update on the July goals that I set for myself at the beginning of the month.

MONDAY
Salmon steaks, brown rice with roasted veggies

Shrimp and Chicken LoMein (Rachel Ray recipe!)

Beef Tips with egg noodles and green beans

Fish Tacos with slaw dressing, cilantro rice and black beans
Friday
Lunch - leftovers before we hit the road
Dinner - *Murphy Family Reunion* - fish fry
Saturday

Lunch - Wings n More!! Eating here always takes me back to the days when it was our go-to place with friends!
Dinner - something light (tuna, sandwhiches, etc.)

I’m soooo excited!! I’ll be doing my runs around campus! Get to see my old stomping grounds and reminisce…all while seeing how it’s changed!

JULY goals **mid-month update in yellow!**
- tighten up on my eating.  I am a firm believer in not denying myself anything (everything in moderation, right?!) but I have been acting a little spoiled lately and eating a little too much of what I want.  I just need to tighten up a little.  Being home this month is really going to help me do this because I have more time to meal plan, grocery shop, and cook! I have been tightening up but what I have found is that I am simply not as hungry.  I think it’s because I’m not as active.  For breakfast I’ll do yogurt, and then have a late lunch, and usually a light dinner.  I’ve also noticed that I get full a lot faster.  Guess what they say about your stomach shrinking naturally really is true!
- complete at least four projects.  That’s about one a week and very feasible, right? Here are the four projects I hope to accomplish: Ummm, so, haven’t been quite so great with these goals!
1.    Make a new vision board. haven’t started yet, but I have started collecting the pics, stickers, magazine cut-outs for it!
2.    Clean out the closets and make a Goodwill pile.  A large one. I’ve been working on this slowly but surely.  Still working.
3.    Make a cute pin board for little one’s room. Not yet.
4.    Spring Summer Clean!  YES! My house is so clean!  Only wish it was this clean during school year too! J   
- continue my Summer RUNstreak and try to log at least 20 miles per week all month. OH YEAH BABY!  44 days and counting!
- improve my blog and make it more user-friendly working on this little by little.  I’m still learning!
- read at least 8 books this month.  So by this point I should be on book #4?!  Oops, that definitely didn’t happen!  I am reading some great books, though:
1.        Slob – Ellen Potter
2.      The Runner’s Guide to the Meaning of Life – Amby Burfoot
       3. Most Talkative: Stories from the Front Lines of Pop Culture by Andy
           Cohen

Steak, chimichurri, roasted veggies

- out to eat OR
- Curry chicken with onions, bell peppers over brown rice, cucumber salad
Sunday
- out to eat (hopefully Pho or Malaysian food again!) OR
- Salmon, asparagus, orzo salad

Live with Kelly, The View, and Dr. Oz, all shows that I never get to watch during the school year because I’m usually at work when they come on.

Being on vacation.  Today was my first official day of summer break and I must say, it was REALLY nice to stay in my pj’s for pretty much the whole day. J

Wednesday’s weather stays nice and clear for the 4th of July.  I do love me some fireworks!!
